another post involving a pyrex dish & shredded cheese

Who here loves Mexican food?

Anyone? Anyone?

Hellloooooo???

Oh. Right. You can't answer me. But I'm sure all of you bloggy readers are waving your sweet little hands high in the air like you just don't care.

Personally, I could live off of chips and salsa for the rest of my life. Nothing says "yummo" like a chicken chimichanga smothered in queso. I'd better stop there before I ruin our laptop with a puddle of drool.

Sometimes I like to cook ethnic food for my man. And it nearly always winds up being Mexican-ish. I'm okay with that. He loves it. In our house, there is an abundance of ground beef, shredded cheese, Ro-Tel, and tortilla chips at all times. Just call us the TexMex Cox's. If you want.

Ok, I'll finally get around to the point of this blog. Don't rush me, here!! Tonight I made Creamy Burrito Casserole. And it was a hit.

When your husband's mouth is so full of your creation that he can only moan "Mmmmm hmmmmmmm" then you know it's a home run.

I've lovingly taken photos of each step of the process. It's insanely easy. Don't let the steps to this process fool you. Like 80% of my recipes, it includes layering. And a Pyrex dish. And shredded cheese.

Ingredients

  • 1 1/2 lbs ground beef
  • 1/2 medium yellow onion, chopped
  • 1 package taco seasoning
  • 1 can Ro-Tel with chilies
  • 6 large flour tortillas
  • 1 (16 ounce) can refried beans
  • 2-3 cups shredded taco cheese
  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 4 ounces sour cream
  • hot sauce, if desired to spice it up

Step 1: Bring your laptop to the kitchen to read the recipe:

ignore the hamburger container in the back, which holds approximately 2 cups of animal fat. that isn't really there, and it would be gross if it actually existed in my kitchen...



Step 2: brown ground beef & onion:

realize that your pan isn't big enough to hold all you ground beef and switch to a bigger one...



Step 3: shake in the taco seasoning:

Step 4: mix in refried beans

just don't even look at pre-made refried beans
it isn't a pretty sight


Step 5: combine mushroom soup & sour cream in separate bowl:

Step 6: spread mixture onto bottom of casserole dish:

Step 7: tear up 3 flour tortillas and layer them over the mixture:

Step 8: layer half of meat mixture on top:

also, remember that you left our your Ro-Tel and add it in before you start layering


Step 9: smile, because you're acting like a wife:

Step 10: keep layering

Step 11: sprinkle cheese on top:

Step 12: repeat all of this and layer it up again. Then pop it in the oven at 350 for 25 minutes

Step 13: Pull it out of the oven and admire your cute pup, who thinks that she'll be getting some of this. As if.

There you have it. Wearing a sombrero with a striped shaw thing is totally optional, but definitely encouraged. Also, shouting OLE! after eating your first bite is up to you. But, again, totally encouraged.

  2. No!!! I want it!! I never used to be like this, but a person can only make so much grilled chicken and veggies, or meatloaf, or spaghetti. Sometimes (ok, a lot of times) life calls for Mexicanish food. Yummo. :D :D :D

  8. nope, not at all! it ends up just tasting kinda like sour cream-ish. I guess it's to keep it from tasting totally dry. I bet he'd never even know!
